Ingredients

  • 3 pieces of kombu (5x10cm)
  • 6 shiitake mushrooms, dried
  • 1l water

Tools

  • Strainer
  • Pot with lid+heat source
  • Thermometer

Put everything into the pot

Heat to about 60°C (ensure you dont go much over this, the broth gets bitter otherwise), then take of the heat and put the lid on.

Let sit for 30min.

Pour though the strainer
