Vegan dashi broth.
Ingredients
- 3 pieces of kombu (5x10cm)
- 6 shiitake mushrooms, dried
- 1l water
Tools
- Strainer
- Pot with lid+heat source
- Thermometer
Put everything into the pot
Heat to about 60°C (ensure you dont go much over this, the broth gets bitter otherwise), then take of the heat and put the lid on.
Let sit for 30min.
Pour though the strainer
