Ingredients

  • 350 (+/- 1 tablespoon) g flour, optionally gluten free
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract or the content of one vanilla root
  • 180g margarine or vegan butter
  • 100g sugar
  • 150g bannana
  • 200g vegan chocolate

Tools

  • Mixing bowl
  • (optional) electric whisk
  • Oven + baking tin
  • Something to heat margerine, either a water bath or a microwave

This recipe results in around 1000g of dough, out of which i made 20 cookies of around 50g each.

Cut the chocolate into chunks of around 1cm

Peel the banannas, and cut them into small pieces. If they are very hard, mash them up a bit with a fork.

Melt the margarine.

Either whisk or kneed everything but the chocolate chunks together into a uniform dough. You can add some extra flour if its very runny

Now add the chocolate chips and mix them under. You might not want to use an electric whisk for this, it may get jammed on the pieces.

Preheat the oven to 175°C.

Prepare some baking tins. I needed two to fit the whole load of cookies.

With two spoons, measure out blobs of around 50g, and place them onto the tins evenly spaced.

Bake the cookies for 10-12 minutes. they should still be soft. Pull them out and let them cool down.
