Vegan, Vegetarian: Check the variants at the bottom.


Ingredients

  • 250g Flour chocolate

  • 250g corn starch

  • 250ml water

  • 2 tablespoons salt

  • 1.5 tablespoons black pepper

  • 1 tablespoons garlic powder

  • 1 tablespoons onion powder

  • 0.5 tablespoons cayenne pepper

  • 1 tablespoons baking powder

  • 1kg chicken or turkey. Any part you like works, but I use breast or drumsticks usually.

  • Frying oil - This can be reused

Tools

  • Mixing bowl

  • saucepan

  • (optional) Mixer

  • (optional) spice mortar


Combine all the spices and the baking powder, and mix or grind them together. In a mixing bowl, combine the spices, flour, starch and water. Mix until it's a thick batter.

If you have chicken breast or similar, cut them into pieces. They should be smaller than 3cm*3cm*5cm. If you have drumsticks or wings, use them as is.

Put the chicken into the batter. It can be stored in the fridge for up to a day.

Prepare the oil. It should be about 3 cm deep, so the chicken will be submerged fully. The exact amount you need depends on your pan and how big your chicken pieces are.

Grab a piece of chicken from the batter. Let it drip off for a few seconds, then place it into the pan. Place as many pieces as you can, but ensure that they do not touch each other (they will stick together if they do). Fry them until its golden brown. You might need to turn them over once or twice.

I usually use chopsticks for managing the pieces while in the oil.

Variants

Tofu - Replace the chicken with tofu

Take firm tofu. cut into strips, about 2cm * 1cm * 5cm. Fry as described. You need to be a bit more carefull about the crust as it does not adhere as well as to the chicken.

Onion rings - Replace the chicken with Onion

Peel the onion. Cut into 1cm thick slices, take out the center few rings. Fry as described.
