Ingredients

  • 500g Flour 1050
  • 1/2 block of yeast
  • 75g of Sourdough, I usually buy this one
  • 10g of Salt
  • 375ml Water

Tools

  • Mixing bowl
  • Oven + baking tin, baking sheet

Mix the water, the flour and the salt in a big bowl. Let sit for about 30 min.

Add the yeast (as small crumbs) and the sourdough and mix thoroughly.

Let sit for about 1h

Heat the oven to 230°C. Prepare a baking tin with a sheet of baking paper.

Wet your hands, and grab the dough from the sides and pull up, then place it back into the bowl. Turn the bowl 90° and repeat. This should "fold" the dough a bit. Do this 3–4 times. Then, grab the dough the same way but place it on the backing tin.

Put in the oven, and add 1/2 cup (about 150ish ml, doesn't really matter) of water, just splash it into the oven (not onto the bread!)

After 5 min, open the oven and cut the bread in a star shape. Use a very sharp knife, an exato blade (clean beforehand, the hobby ones are usually oiled) or a razor blade. Add another 1/2 cup of water to the oven.

Bake for 30 min.

Bread is ready!

You can check if it's done by turning it around and knocking on the bottom, if it sounds hollow it's done.

Before cutting, let it cool down a bit otherwise it will rip.

Variants

You can add more stuff to the bread.

e.g. Onions. Chop 2 onions and fry them until golden brown. Add them into the dough at step one.

Same works with olives (chop into rings) or bacon (fry lightly).
